I was in college with my friends, and I always tried to discover new dishes with different tastes that could not be eaten as local food but also on occasion. That was an amazing and yummy experience for us, and we had such a delicious dish.

Let’s Cook Pancit Puti With Toasted Garlic
For pancit puti to appear appealing, arrange all your ingredients in advance and ensure the chicken and pork broth is flavorful. To get the enhanced and profound garlic flavor and fragrance, you should specially blacken the garlic, changing the heat from low to medium or even medium-high so that the garlic does not burn at all. This should remind you not to add too much broth to the noodles to prevent them from becoming soggy. It is recommended to enjoy the dish hot and fresh; otherwise, the tasty juice may flood out the starch residue and make the first section too soft.
Ingredients:
- 450 g bihon noodles
- 300 g chicken breast
- 200 g pork
- 250 g shrimp
- 1 head of garlic
- 1 medium red onion
- 1 large white onion
- 4 tbsp fish sauce
- 1/2 tbsp chicken powder
- 1/2 tbsp ground black pepper
- 3 cups chicken pork broth
- 5 tbsp cooking oil
- 250 g cabbage (thinly sliced)
Cooking Instructions:
- First, cook the chicken and pork in a cooking pot for 20-25 minutes until they soften. Take them out to cool and keep the broth on a side. While waiting, wash the Bihon (rice noodles) under the tap for 5 minutes to allow it to soften, then drain.
- Peel the garlic, red and white onions, and cabbage and chop them into pieces. Crumble the chicken breast cooked and cut the pork into small pieces to about ¼ inch in thickness.
- Warm sufficient oil in a pan on medium flame. Chop the garlic and then fry it in the pan until they are golden brown. After that, set them aside. Then fry the shrimp for 3-5 min uncovered after peeling them with the salt of your desire. After that, take the shrimp out of the pan and put it aside.
- Add the sliced chicken to the pan and stir for 15 seconds. Sprinkle fish sauce, ground black pepper, and chicken powder, and stir until well incorporated.
- Put the reserved chicken and pork broth into the pan, cover, and let it boil. Add the softened Bihon noodles & sliced cabbage, then the fried shrimp. Mix everything.
- Lift the lid off the pot and let the stewing carry on for 5 to 8 minutes to reduce the amount of broth. After that, pour the dish on a serving plate. Simply top with toasted garlic, spring onions, and calamansi for the garnish and extra taste. Serve hot and enjoy!
