COOKING INSTRUCTIONS:

  • You have to start by making the dough: First, dissolve the yeast in the water containing two tablespoons of sugar in one small bowl, and let it act for 10 minutes until it forms a foam. This means the yeast is active thus ready to act as a leaven on your dough.
  • The second process involves placing a big bowl that we shall mix all the dough-sugar (1⁄2 cup), flour, baking powder and salt. Once all is incorporated you will have a soft dough which should be kneaded for approximately 10 minutes until it is smooth and elastic.
  • Take a bowl and oil it before putting the dough, then cover the bowl with a wet cloth of nylon. This dough needs to rise in a warm area for around an hour or until it doubles in size it should be very puffy.
  • Meanwhile, one can work on the filling. So for the filling: heat oil in pan and fry minced garlic and onion. Then you put the pork pieces in the pan and fry for a few minutes to brown all sides of the pieces. It is now about 45 minutes pour in soy sauce around 2 tablespoons and sugar 2 tablespoons, oyster sauce and Hoisin sauce each.
  • After adding the sauce and saute the garlic and onion, add water and let the mixture to cook on low heat for 30-40 minutes. Once in a while it is also good to stir the food so that there is no burning at the bottom end of the pan.
  • After the pork is done, pour the cornstarch over the pork and let the sauce in the pan thicken up. Oh yeah you have to continue stirring until the mixture is neither too watery nor too thick. Then turn of the heat and leave the filling cool for some time before proceeding.
  • Knead the rising dough, divide it into two halves and shape each half into a round then flat disc. Simply place about a tablespoon of chilled pork mix at the center of each levelled dough bowl.
  • To seal the filling within, you can just bring the dough’s edges and then pinch them together on the top. Make sure there’s no space where the filler could slip away. Place each filled bun cut side up on a piece of little parchment paper squares.
  • Place them close to each other, but not touching each other since they will expand during cooking; arrange them in a steamer basket. Poach the buns until they are tender, and the surface is shiny, though it takes 15- 20 min or so.
  • Finally move the buns to a serving plate and serve while hot and steaming. They may be enjoyed in their natural state or accompanied with your choice of side dipping sauce.
