Sotanghon noodles are almost odourless, very thin clear and glassy with delicate and elastic texture. INGREDIENTS:

  • 500 g pork belly (bite sized sliced)
  • 2 pack of pancit canton noodles
  • 3 cloves garlic (minced)
  • 1 Napa cabbage (thinly sliced)
  • 3 red bell peppers (thinly sliced)
  • 2 cup Baguio beans (green beans) cut into bite-sized pieces
  • 2 pack of dried vermicelli Sotanghon noodles
  • 3 carrots, julienned (thinly cut into matchsticks)
  • 1 onion (chopped)
  • 2 tbsp freshly ground black pepper
  • 1/2 cup soy sauce
  • 2 cup water
  • 1/2 cup cooking oil
  • 2 tsp all-purpose seasoning (for taste)

COOKING INSTRUCTIONS:

  • Heat a pan by putting it on the counter top.
  • Put some pig belly here. Chop it to small sizes and then put it in the pan.
  • To cook the meat equally, spread the pieces all over the pan and cover it. Fry until it changes colour to brown.
  • After browning, transfer the pork from the pan and place it into another dish; it will be used later.
  • Saute the onion in the pan and stir it. After stirring for 30 seconds, add the garlic.
  • When the onion and garlic have nicely browned and caramelised, add the green beans (Baguio beans) to the pan. Stir and then wait for 20 seconds.
  • Now, add napa cabbage and carrots and mix well for a minute.
  • Mix all the veggies after adding spices. Subsequently, transfer the vegetables out of the pan (such a meal does not need overcooked vegetables). Reserve some of the mixture for the next step.
  • Now, pour two cups of water into the pan with the noodles, including vermicelli glass noodles, Pancit canton, or egg noodles.
  • Add the bouillon cube or broth cube and mix, allowing it to dissolve into the liquid. Then, cook the noodles until they are soft. The liquid will also reduce because of this.
  • At this point, put the veggies that you pulled out earlier and stir properly. After that, add the meat and the red bell pepper and mix it with two spatulas.
