Add a quarter of the lettuce, carrots, cucumber, red onion, and shredded cheese, then place one quarter of the buffalo chicken over the vegetables. Keep the filling concentrated in the center rather than spreading it to the outer edges, because this leaves enough tortilla available to fold and seal the wrap properly.
  • Fold the bottom edge of the tortilla over the filling, fold both sides inward, and roll the tortilla forward firmly until the filling is enclosed. Repeat with the remaining tortillas and filling, then slice each wrap diagonally if desired and serve immediately with extra ranch dressing or buffalo sauce on the side. If preparing the wraps for later, wrap each one tightly in parchment paper or foil and refrigerate them, keeping especially wet sauces separate when possible.
